Potatoes can be pretty cheap. It’s not uncommon for me to buy a 5-lb. bag for $2. Because of that, they are a great way to fill out a meal (or make into a meal!) Below is a list of some of the potato-based things I could think of. If you have any other suggestions then please leave them in the comments with a link if you have one!
- Shepherd’s Pie
- Scalloped Potatoes with Ham
- Home-made Potato Chips
- Baked Potato
- Twice-Baked Potatoes
- Home Fries
- Hash Browns
- Home-made French Fries
- Pierogis
- Roasted Potatoes
- Mashed potatoes (especially loaded!)
- Cheesy Potato Soup
- Easy Cheesy Golden Potato Squares*
- Potato Salad – Although this recipe* looks YUM to me too.
- Potato Toast* ~ Looks pretty weird but has good reviews. Who knows!
- Heartland Vegetable Bake*
- Potato Skins
- Chili Potato Wedges*
Recipes with an asterisk (*) are recipes I found but haven’t tried yet. They look good but I can’t guarantee their yummy-ness.

Sweet potatoes are CHEAP in these parts, and yummy. I’ll throw in a couple of suggestions for your list: sweet potato casserole (it’s like dessert!) and sweet potato chili. I found a good recipe at “A Year of Slow Cooking.”
This is my favorite time of year for eating well and inexpensively. Can’t wait for the farmers’ market to open!

I LOVE sweet potato casserole. We’ve had that for the past 2 Thanksgivings and it is very delicious!
I LOVE me some potatoes!!! Another great recipe to use up potatoes is Potato Gnocchi. You can find a recipe on the Living on a Dime website.
Sometimes I forget about some of these wonderful standbys. Thanks for the refresher list. There have been a log of great potato sales lately. Picked up a 5 lb bag last week for 67 cents, so I have potatoes on the shelf to use up
