Quick Tip: Homemade Frozen Pie Crust

It’s that season – pie season. I love pies. I love baking and I’m pretty good at it – with the exception of pie crusts. If I make one that comes out great – it’s a fluke. I will have no idea why. Mostly, my pie crusts are fine but not great. I still make them for 2 reasons though.

1.) If I keep making them I’m bound to get better at it, right?

2.) They are SO inexpensive to make that it’s just silly to buy them.

I’ve just told you I’m not great at making pie crusts so I’m sure you’re wondering what kind of legitimate tip I could have to offer. This is my Quick tip feature so I won’t keep you waiting. Here’s the tip:

Always make two crusts. In my cookbook there is a recipe for a one-crust pie and a recipe for a two-crust pie. I always make the two-crust recipe. Then, when I am making a cream pie or a quiche that only needs one crust, I freeze the other one.

Here’s what I do: I roll out the spare crust in the usual circular shape, then lay it on a square of plastic wrap just a little larger than the crust and roll the crust up in the plastic wrap. I wrap the ends around it and lay it nicely in the freezer. Then when I need a crust I pull it out and set it on the counter to thaw for a while and it’s all ready to go.

Not only does this save money over purchasing frozen pie crusts, it saves time. I only had to make pie crust once for two pies. Love that.

Why I do what I do ~ Chloe held up her thumb, index finger and pinky finger in the “I Love You” sign and said, “This is I Love You.” Then she closed all of her fingers except her thumb and said, “This is I Love You So Tight.” HOW CUTE IS SHE??? :)

Thanks for the tip! Last time I put the pie crusts in the pie pans, fluted them beautifully, and stacked them (3) in the chest freezer. Over the course of a few months, all the time-consuming fluted got knocked off, the crusts cracked, and after patching I only got one functional crust out of them. I say functional because it weren’t pretty!!! Next time, we do things your way.

And yes, she’s adorable. You’re a lucky mom. :)
