
A little while ago I had written a post about organizing my freezer. In the comments, Janice pointed out that I had store-bought frozen waffles and that she had great success making them from scratch and freezing them. The idea had never really occurred to me. I’d thrown out extra waffles plenty of times and never even thought of freezing them. Silly girl.
So I gave it a try. We already had a small, inexpensive waffle iron. Chloe and I are big waffle fans and my hubby will occasionally have one with an egg on top (does anyone else think that’s a little weird?). I made a batch of waffles for just Chloe and I one night and I froze all of the remaining waffles in a gallon-size freezer bag. It turns out Janice was right – big time. I had no problem taking out one at a time and they toasted perfectly. Tastes SO much better than the store-bought frozen ones. Really, no comparison.
The recipe I use is nothing fantastic or secret, but in case you’re interested ….
Homemade Waffle Recipe
- 2 large eggs
- 2 cups flour (try mixing white and wheat)
- 1-3/4 cups milk
- 1/2 cup vegetable oil
- 1 tbsp. white OR brown sugar
- 4 tsp. baking powder
- pinch of salt
- Cinnamon (I add it to almost everything, you don’t have to)
Directions: Beat the eggs. Add remaining ingredients and beat until smooth. Cook in a greased, hot waffle iron. If you plan to freeze them, then remember they’ll brown a little more when they’re toasted so you’ll want them to be very light after they’re cooked on the waffle iron.

I do the same thing with pancakes too! I will be trying your recipe soon as I made some waffles from scratch a few weeks ago and they tasted too much like flour.

I use the recipe you posted.
I sub 1/2 cup wheatgerm for 1/2 c of the flour.
I also sub applesauce for the oil (same amount that is called for).
