On Christmas Day we always have a big ham dinner, which I love, but once that dinner is over I want to relax for a couple days. I don’t want to be slaving in the kitchen I just want to be, and enjoy my family. I want to cuddle on the couch in my pj’s and watch my daughter play with her toys and play games with our family. I want to eat leftover ham sandwiches and just enjoy being together. That’s what I’m going to do for the next few days. My posts will be light through the New Year because I’ll be out of town, but I don’t mind (and I hope you don’t either) because sometimes there are just more important things.
That said, here’s a throw in the crockpot recipe for your leftover ham dinner that will warm your tummies as you’re cozying on the couch this weekend.
Cheesy Ham & Potato Soup
6 cups potatoes (or leftover mashed potatoes)
2-1/2 cups water
1/2 c. chopped onion
2 tsp. instant chicken bouillon granules
dash of pepper
leftover ham, cut up
1-1/2 cups shredded cheese (whatever you like, I use monterey jack/cheddar)
12-oz. can evaporated milk
Directions: Combine potatoes, water, onion, bouillon, pepper and ham in crock pot. Cover; cook on low for 8-9 hours or on high for 4 hours (cooking time is FAR less if using leftover mashed potatoes as opposed to raw). Stir cheese and milk into mixture and cook 30 more minutes. Mash potatoes a little more, mix and serve.
